JAKARTA – Many people think that palm oil\u2019s benefits and applications are only limited to foods or even just cooking oil. But in reality across the globe, the versatility of palm oil goes far beyond just cooking oil.<\/p>\n

African people have used the palm oil for many applications, from foods to traditional medicines since ancient times. Besides extracting its oil, they also ferment the ripe palm fruits to produce wine (Carrere, 2013). Until now, around 70-90 percent of global palm oil is used to produce food products (Sheil et al., 2009; Shimizu and Descrochers, 2012; Gaskell, 2012; Kojima et al., 2016; Parcell et al., 2018; Hariyadi, 2020).<\/p>\n

Palm oil has characteristics such as stable conditions in high temperatures against oxidation or other degradation process, natural preservative that makes it last longer fresh, soft texture and creamy, odorless, no taste, tends to crystalize, and nutritional content beneficial for human health (Hariyadi, 2014; Pande et al., 2012; Mba et al., 2015).<\/p>\n

Palm oil has a unique, balanced and flexible composition of saturated and unsaturated fatty acids, making it a very versatile functionality (MPOC, 2018), such as emulsifier and stabilizer. Its price is also relatively more competitive, supply in big volume and stable along the year, which makes it even more favorable among the global foods industries.<\/p>\n

The cooking oil is one of the products derived from palm oil (olein fraction), which is widely consumed by households and industries. Such advantages have made the palm oil as \u201cthe gold standard in frying\u201d (Hariyadi, 2014).<\/p>\n

Besides the palm oil-based cooking oil, there are many other food products which are produced based on the palm oil and widely used by global consumers. The food products produced from the processing of palm oil can be categorized as follows: Culinary Oils\/Fats, Bakery Oils\/Fats, Chocolate and Confectionery Fats, Dairy Fats Alternatives and Functional Oils\/Fats (picture-3).<\/p>\n

Besides the food products, the palm oil can also be processed to produce non-food products as shown by the following Table-7.<\/p>\n

The processing of palm oil results in two fractions, namely olein and stearin. Olein is liquid fraction that is used for cooking oil (culinary oils), while the stearin is the solid fraction at ambient temperature that is widely used as hard fat component to produce bakery oils\/fats such as margarine and shortening for cakes, breads, pastries, biscuits, instant noodles, etc.<\/p>\n

Palm oil has specialty fats which can be an alternative to vegetable\/ animal fats. One of applications of specialty fats based on palm oil is to replace cocoa butter in products based on chocolate (such as cocoa butter replacer\/substitute), replace the animal fats in creamer products (non-diary creamer), cheese, ice cream, etc. The palm-based specialty fat can be also used to provide certain functionalities (Functional Oils\/Fats), such as healthy functionalities to replace human milk fat substitute found in formula milk products.<\/p>\n

Palm-based food products can be also produced from the palm biomass, such as its palm trunks. Inside the trunk there is sap water that can be processed into palm brown sugar (Agustira et al., 2019; PASPI Monitor, 2019g). The palm brown sugar is healthier than other brown sugar, due to its fructose composition that is suitable for people with diabetes.<\/p>\n

Besides being processed into food products, the palm oil is also processed into health products in the forms of vitamins and supplements. Content of bioactive compounds in palm oil, such as carotene, tocopherol, and tocotrienols can be used to produce various health supplement products that can be consumed to maintain body health. \u00a0(Tarigan et al., 2022). Superfood products based on red palm oil has been widely traded in Indonesian and Malaysian markets.<\/p>\n

The above description shows that palm oil has been used as raw material to produce a variety of foods and non-foods products. As research activities are continually conducted to innovate in the downstream palm oil industries, more and more products foods and non-foods are expected to produce based on the palm oil to fulfill the growing demand of global consumers.
